HOW IT'S SOLD


 
 

Bulk orders are sold by the pound based on the hanging weight. The hanging weight refers to the total weight of the beef prior to aging, cutting and trimming. All price quotes include dry-aging of the meat for 21 days, custom hand cutting to the customer specifications, wrapping and freezing.

The bulk purchasing options we offer are as follows:

 
 

 SIDE:
The hanging weight of a side is approximately 350-400 lbs prior to aging, cutting and trimming. Generally, our customers take home about 55-60% of the of the hanging weight as finished product depending on their preferences in cutting.

SPLIT SIDE:
 A split side is half of a full side.

HIND QUARTER:
The hanging weight of a hind quarter is generally about 160 lbs.

FRONT QUARTER:
The hanging weight of a front quarter is generally about 200 lbs.

 

Other Options that we offer are as follows:

40lb BOX OF MIXED CUTS:
Each box contains 6 lbs of assorted grilling steaks, 6 lbs of assorted marinating steaks or equivalent in roasts, one 3 lb boneless pot roast, three 3lb oven roasts, 4 lbs of stewing beef and 12 lbs of ground beef.
